Broccoli Stems and Egg Breakfast

1-2 Broccoli Stems peeled and diced

1 egg

1 TB Avocado Oil or your preference

Salt and Pepper to taste

Marjoram (optional)

Parsley (optional)

I used 5 broccoli stems in the picture but can be adjusted depending on servings desired.

 

Cut florets from stems and save for another use.

 

Trim or peel broccoli stems then place in food processor and dice to desired consistency.

 

Place 1 Tb oil in pan turn on medium heat.

 

Place diced broccoli stems into pan and cook 10-15 min until getting brown bits. Ok to eat broccoli raw too.

 

Cook 1 egg however you prefer.

 

Serve on top of plated broccoli stems.

 

Sprinkle with salt and pepper and a little marjoram.

Enjoy.

Winter Salad

Ingredients

Salad greens with Arugula

Kohlrabi

Carrots 

Cooked Sweet Potato

1/4 cup raw Cashews

Apple Cider Vinegar

Olive Oil

1 garlic Clove

pinch of salt

Directions

Any salad mix will do but I like the spicy kick Arugula adds to this recipe.

Peel and cut Kohlrabi to desired shape.

 

Peel and cut carrots into small sticks

 

Cube 1/4 cup cooked sweet potato

 

Mix 1 Tb olive oil and 1tsp apple cider vinegar for dressing.

In food processor or bullet type blender process 1/4 cup cashews with 1 garlic clove and pinch of salt

Add this topping to salad and pour dressing over then mix.
